Three types of Sucralose in the market

It is sold in raw material (in bulk) as pure powder and granular OR as finished products in the supermarket that can be directly (conveniently) used available as solid (such as Splenda) or liquid.

1. Pure sucralose
It is available in powder and granular form. China is the biggest manufacturer and exporter in the world, the export quantity in 2019 to United Status is around 2,000MT.

2. Splenda
Splenda is a common brand of the finished product of sucralose in the market and there are several types under this brand. Its no-calorie packet contains small amounts of the two carbs/bulking agents: dextrose and maltodextrin (1).

3. Liquid sucralose
It is a clear and colorless liquid and commonly sold in the market made of 25% of sucralose or with other concentrations, may contain very little composition of preservatives (such as potassium sorbate, sodium benzoate), acidulants (e.g. citric acid, succinic acid) and other components.

The liquid form is more stable and can extend the shelf life compared with the pure form.

It is recommended to use in PH level below 7 in general food, and PH below 8 in the bakery.

Erythorbic Acid

Erythorbic Acid is vitamin C a stereoisomer, and thus the chemical nature of vitamin C similar. Erythorbic Acid white to light yellow or crystal powder, odorless, acid taste, melting point 166-172 ℃, and decomposition, Erythorbic Acid gradually darken when exposed to light. Dry state, Erythorbic Acid fairly stable in the air, and in solution when exposed to air and rapidly degenerate, E315 almost no role in the physiological activity of ascorbic acid, Erythorbic Acid antioxidant properties than ascorbic acid, but the Erythorbic Acid poor heat resistance, reduced intensity, decomposition of heavy metal ions can promote Erythorbic Acid, Erythorbic Acid soluble in water at room temperature solubility of 40g/100ml, soluble in ethanol, 5g/100ml, insoluble in glycerin, insoluble in benzene, 1% aqueous solution of the PH value of 2.8. Antioxidant sodium erythorbate, far more than the antioxidant capacity of vitamin C, no vitamin C to strengthen the role, but the Erythorbic Acid will not hinder the bodys absorption and utilization of ascorbic acid. Human intake of E315, the body can be transformed into vitamin C. U.S. Food and Drug Administration (1980) Erythorbic Acid is generally recognized as safe substances.

How is Erythorbic Acid made?

It can be produced by a reaction between methyl 2-keto-D-gluconate and sulphuric acid.

Generally, the manufacturing process has 5 steps:

Producing calcium 2-keto-D-gluconate: food-grade starch hydrolysate fermentation by Pseudomonas fluorescens with calcium carbonate.
Acidify the above fermentation broth to obtain 2-keto-D-gluconic acid (2-KG).
Esterification 2-KG with methanol under acid conditions to yield methyl 2-keto-D-gluconate.
The synthesis of sodium erythorbate: heating the above suspension with sodium bicarbonate or sodium carbonate.
The reaction between sodium erythorbate and sulphuric acid.

How is Benzoic Acid made?

There are two types of benzoic acid, one is the natural form extracted from plants and can be used as a flavor with the FEMA No. 2131. Another one is the most used one, obtained from toluene synthesis and here we would like to introduce the brief manufacturing process of this one.

Toluene oxidation
Benzoic acid is largely commercially produced by liquid-phase oxidation of toluene (from petrochemical processing) with oxygen in the presence of a cobalt catalyst.

If for food and pharmaceutical applications, other manufacturing processes (e.g. sublimation, recrystallization and neutralization) need to be further performed to purify crude benzoic acid as it may contain by-products such as benzaldehyde, benzyl alcohol and benzyl benzoate. (1)

Other methods
Food grade benzoic acid can also be manufactured from the following two methods mentioned by the FDA (2):

molten phthalic anhydride with a zinc oxide catalyst
hydrolysis of benzotrichloride
By the way, benzoic acid can also be produced from sodium benzoate with HCL.
